Based in Morgan, South Australia, we are able to place our bees on rural, natural bush sites located in the Riverland and Mid-Murray. The honey we produce from these sites is mainly Mallee Honey. This has a lovely, amber colour with a fabulous aroma. We produce Cold-Extracted Table Honey and set our Table Honey standards higher than other honeys.

What is Honey?

Honey is the nectar of flowers, which is gathered by worker bees and after modification is stored in the cells of the comb. Honey contains amino acids, enzymes and readily digestible sugars, such as levulose, dextrose, fructose and maltose. We consider it a "living food".

Formerly honey was obtained from the comb by bruising and straining or pressing. Under the modern system of frame-hive Apiculture, the honey is removed by centrifugal force, in the honey extractor, and the combs are returned to the hive to be again filled by the bees.

How is Cold-Extracted Honey different?

Our honey has been "Cold-Extracted" to preserve all these beneficial qualities. This means we do not heat treat, or pasteurise, our honey during the extraction process. Honey that has not been heat treated will eventually crystallise, or candy.

Crystallized Honey can be returned to a liquid state by gentle warming.
Immerse the honey jar in hot (not boiling) water for a few minutes.
Over-heating the honey will kill the enzymes and destroy the natural properties of the honey.
